Gochujang Beef Tacos with Everyday Gochujang Sauce

Tender shredded beef cooks slowly in Mother-in-Law’s Gochujang Chile Paste, creating a savory, mild flavor. Served in soft tortillas with crisp purple cabbage and a hint of thyme, and topped with Mother-in-Law’s Everyday Gochujang Sauce mayo, these tacos are easy, flavorful, and perfect for any meal. Add extra Everyday Gochujang for more depth of flavor if desired.

INGREDIENTS

For the beef

  • 4 lb chuck roast (about 1.8 kg)
  • 3 shallots, thinly sliced
  • 4 garlic cloves, minced
  • ¼ cup green onions, chopped
  • 2–3 tbsp Mother-in-Law’s Original Gochujang Chile Paste
  • 1 tsp Mother-in-Law's Gochugaru Korean Chile Flakes
  • 1 tsp dried thyme (or a few sprigs fresh thyme)
  • ½ cup soy sauce
  • 2 tbsp rice vinegar (or ginger juice)
  • 2 tbsp olive oil
  • ¾ cup water


For serving (tacos)

  • Shredded purple cabbage
  • Cilantro, avocado, cotija cheese (optional)
  • Tortillas or taco shells


For the Everyday Gochujang Mayo (½ cup)

  • ½ cup mayonnaise
  • 2 tsp Mother-in-Law’s Everyday Gochujang Sauce (Original)
  • 1 tsp toasted sesame oil
  • 1 tsp honey

 


 

DIRECTIONS

1. Prep the beef.
Place the chuck roast in your SmartCook pot, slow cooker, or Instant Pot. Add shallots, garlic, green onions, and thyme.
2. Add the sauce.
Mix Mother-in-Law’s Original Gochujang Chile Paste, chile flakes, soy sauce, rice vinegar, olive oil, and water. Pour over the beef.
3. Cook the beef.
Slow Cooker / SmartCook Slow Mode: LOW 5–6 hrs
4. Shred the meat.
Use two forks to shred the beef directly in the pot, mixing it with the sauce.
5. Make the mayo.
Whisk mayonnaise with Mother-in-Law’s Everyday Gochujang Sauce, toasted sesame oil, and honey until smooth.
6. Assemble the tacos.
Layer shredded purple cabbage and shredded beef in tortillas. Add cilantro, avocado, or cotija cheese if desired.
7. Serve.
Drizzle with Everyday Gochujang Mayo and serve immediately. Add extra Everyday Gochujang Sauce for more flavor if desired.

  • Pecorino Romano, freshly grated (Optional)
  • Olive oil or butter
  • Pasta water
  • Black pepper

 


 

DIRECTIONS

1. Cook spaghetti in salted water until al dente. Reserve pasta water before draining.
2. In a pan, heat olive oil or butter over medium heat.
3. Add the Pastacraft cacio e pepe starter mix and whisk in pasta water until the sauce becomes creamy and glossy.
4. Add Mother-in-Law gochujang and stir until smooth and fully combined.
5. Turn off the heat. Toss in the spaghetti and mix until evenly coated.
