A juicy, crispy-edged smash burger with a bold Korean twist! INGREDIENTS (makes 2 burgers)
Kimchi Gochujang Sauce
2–4 tablespoons Mother-in-Law’s kimchi juice
2 tablespoons Mother-in-Law’s gochujang
1–2 tablespoons mayonnaise
½ teaspoon sugar or honey
A few drops sesame oil (optional)
1 tablespoon Mother-in-Law’s Korean chili flakes
Burger
2 burger buns, toasted
Ground beef (for 2 patties)
2 slices American cheese or Muenster cheese
Finely chopped onion
Mother-in-Law’s chopped kimchi
2–3 pickle slices (optional)
1 teaspoon butter (for toasting buns)
Salt & pepper
Onion powder
DIRECTIONS
Season ground beef with salt, pepper, and onion powder. Divide into 2 portions, loosely shape into balls, then gently flatten into round patties slightly wider than the bun. Keep chilled until cooking.
Heat a pan over medium heat and lightly butter the burger buns. Toast until golden and set aside.
Preheat a pan until very hot. Place the beef patty on the pan and immediately smash it flat. Cook for 3–4 minutes until deeply browned and crispy on the edges.
Flip the patty, then immediately add cheese on top. Cook for about 1 more minute until melted and gooey.
In a bowl, mix kimchi juice with gochujang first, then stir in mayonnaise until smooth and creamy. Add honey or sugar, sesame oil (optional), and chili flakes to balance the flavor.
Assemble the burger: bottom bun → kimchi gochujang sauce → cheesy smash patty → chopped onion → chopped kimchi → pickles → extra sauce → top bun.
Serve immediately and enjoy!
