Squid Stir Fry

Ingredients
Serves 2-4
1 pound squid (baby wild or large squid), cleaned
¼ cup MIL Garlic Gochujang
2 tablespoons cooking oil
1 medium size yellow onion, cut in half, sliced into 1/8 inch thick
1 medium carrot, sliced into ¼ inch thick diagonal half moon shapes
1 medium zucchini sliced into ¼ inch thick diagonal half moon shapes
1 tablespoon sesame oil
2 stalk of green onion, thinly sliced into 2 inch sections long slices halved
1 tablespoon roasted sesame seeds (optional)
Preparation
We should all be choosing to eat more wild sustainable seafood like squid. It’s delicious as a stir fry with vegetables that works beautifully with gochujang. Enjoy over cooked rice or quinoa.
- Cut squid into bite size pieces
- Mix cut squid with Gochujang sauce in a medium size bowl
- Heat neutral oil in hot a large non-stick or cast iron pan over medium heat
- Cook onions, carrot, zucchini on pan with a pinch of salt until translucent
- Add marinated squid for 3-5 minutes being careful not to overcook it
- Add green onions as last step
- Garnish with sesame seeds as desired
